1) Fermentation R&D
Develops Korean fermentation-based products (e.g., jang, vinegar, nuruk, lactic fermentation) through recipe and process design
Standardizes fermentation processes with SOPs and key control parameters (temperature, time, salinity, pH, sugar/Brix)
Establishes sensory evaluation and batch-level quality criteria to ensure reproducibility
Designs and improves distribution stability (ambient/refrigerated), including low-salt and premium product lines
2) Food Manufacturing & Commercialization
Manufactures and processes fermented foods and fermentation-based sauces, seasonings, pickled/fermented items, and fermented beverages
